Banana Greek Yogurt Oat Muffins

Ingredients:

  • 1 cup plain Greek yogurt
  • 2 ripe bananas
  • 2 eggs
  • 2 cups rolled oats
  • 1/4 cup brown sugar
  • 1.5 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup chocolate chips (optional, or you can skip these to highlight the matcha flavor)

Instructions:

  1. Preheat oven to 400°F.
  2. In a blender, combine all ingredients except the chocolate chips (if using) and blend until smooth.
  3. Stir in the chocolate chips, then pour the batter into a greased or lined muffin tin.
  4. Bake for 10-12 minutes or until a toothpick comes out clean.
  5. Let cool and enjoy!
